Blueberry-Walnut Banana Bread
½ c. walnuts, chopped
1¾ c. flour
¼ c. granulated sugar
¼ c. brown sugar, packed
1 t. baking soda
½ t. baking powder
¼ t. salt
¼ c. applesauce
¼ c. vanilla yogurt
2 large eggs
1 t. vanilla extract
4 bananas, very ripe, peeled and mashed
(about 1 ½ cups)
1½ c. blueberries

Preheat oven to 350°F.
-
Grease a 9x5-inch loaf pan; set aside.
-
In large bowl, mix walnuts, sugars, baking soda, baking powder and salt; set aside.
-
In medium bowl, mix applesauce, yogurt, eggs, vanilla extract and mashed bananas.
-
Fold wet ingredients into dry ingredients just until moistened (you should still see some “dry” flour).
-
Gently fold in blueberries until you can no longer see “dry” flour.

Pour into prepared pan.

Bake for 50-55 minutes until toothpick inserted into center comes out clean.

Allow to sit for 15 minutes before removing from pan and placing on wire rack to cool.

Cool completely before slicing.

Makes 1 delicious loaf.

Perfect Every Time
Easy Brown Rice
8 cups water
1 cup brown rice
Salt
-
Place rice in a small mesh strainer and rinse thoroughly under cold water, about 30 seconds.

Bring water to a boil in a large, covered pot.
-
Add rice, stirring once or twice, cover.
-
Fast simmer for 30 minutes; if simmering bubbles threaten to boil over, leave lid slightly askew but keep fast simmer.
-
Pour cooked rice into strainer to drain off excess water, if any.
-
Return drained rice back to original pot with heat turned OFF.
-
Add salt, to taste.
-
Cover and let rest for 10 minutes.
-
Fluff with fork and enjoy!
Makes 3 cups of cooked rice.​

Family Favorite
BBQ Thanksgiving Meatloaf
1 lb. ground turkey
1 egg
2½ c. cornbread stuffing, cooked
1/3 c. half-n-half
3 oz. cream cheese
½ of 1 onion
5 lg. mushrooms
½ t. poultry seasoning
½ t. thyme, ground
½ t. onion powder
½ t. garlic powder
Salt & Pepper
BBQ Sauce

Preheat oven to 350 degrees.

Pulse onion and mushrooms, separately, in food processor until finely chopped or finely dice by hand.

Mix all ingredients except cream cheese and BBQ sauce until well combined
-
Gently fold in cream cheese being sure to leave small “bites” throughout mixture.
-
Lightly grease or spray an 8x4 loaf pan or 18 muffin tins*.
-
Press meat mixture into pan evenly (do not “round” tops).
-
Cover surface of meat mixture with BBQ sauce.
-
Bake loaf pan for 65 minutes or muffin tin(s) for 40 minutes; let sit for 5 minutes before serving.
Yield: One loaf or 18 muffins.
*If using muffin tins, fill any empty “holes” with water to prevent pan from scorching.
